Oat & Coconut (Eggless) Cookies: #ShareYourMeal Recipe

Looking for a warm & tasty snack to go with your cup of afternoon tea/coffee? Then look no further, these (eggless) oat & coconut cookies are the perfect accompaniment! 

Prep time: 10 mins / Cooking time: 25 mins / Makes: 6-8 large cookies / Cost: 6-8 cookies (£1), with total ingredients cost at £15.

Oat & Coconut Cookies: Ingredients

  • 100g softened butter
  • 1 tbsp brown sugar
  • ½ tbsp white sugar
  • 1 cup plain flour
  • 1 cup rolled oats
  • ½ cup desiccated coconut
  • 1 handful coconut shavings
  • 1 tsp baking powder
  • 1 tsp vanilla
  • ½ tsp cinnamon powder
  • 1 tbsp vegetable oil
  • 1 – 3 tbsp water or milk

Oat & Coconut Cookies: Method

  1. Preheat the oven to 170C/350F or gas mark 4, and line a tray with brown baking paper
  2. In a bowl, beat together the brown and white sugar with the butter and vanilla until light and creamy.
  3. Mix in the flour, oats, coconut desiccated, baking powder and cinnamon. The mixture will be semi loose at this stage. I tend to use my hands at this stage to get the butter coating all the ingredients.
  4. Add the oil, mix.
  5. Add 1 tbsp of water/milk, mix. If it is still dry and you don’t feel you could roll a cookie in your palm without it completely disintegrating, add another tablespoon of water/milk. A total of 3 tablespoon should be enough.
  6. Fold in the coconut shavings.
  7. Scoop up 2 tablespoons of the mixture into the palm of your hands and roughly shape it into a circle and place it on the lined tray.
  8. Cook for 25 min or until golden.
  9. Leave it to cool for 5 mins before tucking in. For chocolate lovers, why not melt a few cubes of chocolate and drizzle it over!
